Chauffer doucement tout en fouettant jusqu'\u00e0 ce que le m\u00e9lange soit homog\u00e8ne.\n\nPasser le m\u00e9lange au tamis fin si n\u00e9cessaire, incorporer la g\u00e9latine et transf\u00e9rer dans un r\u00e9cipient.\n\nLaisser prendre au r\u00e9frig\u00e9rateur pendant quelques heures jusqu'\u00e0 ce qu'il soit compl\u00e8tement refroidi et ferme.\n\nFouetter lentement jusqu'\u00e0 l'obtention de pics mous.
