Mix de bloemkool tot een glad beslag terwijl je room toevoegt. Passeer het mengsel door een zeef om een perfect gladde textuur te krijgen en voeg dan het jota poeder toe.<\/p>\n<p>Verwarm het mengsel tot ongeveer 70-80 \u00b0C zodat het iota poeder volledig oplost. Als het mengsel afkoelt, begint het te geleren, meestal onder 40-50 \u00b0C.<\/p>\n<p>Giet het mengsel in de vormpjes en zet ze even in de vriezer zodat de structuur snel hard wordt en goed uit de vorm kan worden gehaald.
