Cauliflower Cream Pearl Ring

Ingredients

250 g Cauliflower
Cream
4 g Iota powder

Cook the cauliflower until tender. Blend the cauliflower into a smooth batter while adding cream. Pass the mixture through a sieve to achieve a perfectly smooth texture, then add the iota powder.

Heat the mixture to approximately 70–80 °C so the iota powder fully dissolves. As the mixture cools, it will begin to gel, usually below 40–50 °C.

Pour the mixture into molds and place them briefly in the shock freezer so the structure sets quickly and can be cleanly demolded. Return the rings to the freezer, freeze solid, and keep them ready for service.
