This recipe is for approximately three Parmesan Tuille Sheets.
Method
Mix the flour, cornstarch, sugar and salt. Add the egg white, Parmesan cheese and melted butter. Whisk until a smooth batter forms.
Let the batter rest overnight.
Spread the batter into the mold and level it with a pallet knife. Bake the tuile at 160 °C (320 °F) for around 15 minutes.
Remove the tuille from the mold while still warm.
Tip: Give some color to a small portion of the batter with, for example, some tomato paste, and spread it into the first layer of the mold to make the letters more visible.

Designed for high-volume service, the larger format allows chefs to create multiple tuilles from a single bake. Once baked, it is up to you how to use it: cut, tear or roll it.
